Autumn Living & Miso Soup Recipe

In eastern medicine each season relates to an element. Their belief is that we are made up of these elements. In autumn the element is metal, and the related organs are the lungs and large intestines. If we lack a balance of the metal element the functioning of these organs may be decreased.

It is important to eat mineral rich foods in Autumn. A great way to start the day is with a Miso Soup. Miso soup is known to strengthen the quality of the blood and lymph fluid. It contains essential amino acids, a good source of protein and aids in the digestion of food in the intestines.
Miso Soup Recipe
Ingredients:
1 strip of seaweed (wakame)
1 shitake Mushroom
Assorted Veges
Ginger or shallots to activate
Method:
Bring water to boil in medium saucepan
Add finely cut strips of seaweed + ½ shitake mushroom. Simmer for 20 mins.
Saute Shallots in fry pan. Add sea salt to seal inhibit acid. Continue to sauté any veges you with until cooked.
Turn saucepan down to a very low simmer and add sautéed veges to pot. Allow to simmer gently for 10 mins.
Take a cup of stock from the pot and add 1tbsp of Miso paste. Dissolve.
Once dissolved add half a tsp of Ginger and return to saucepan. Allow to gently cook for 10 mins before serving.
NEVER BOIL MISO & DO NOT store miso in the fridge.
Miso is an ideal winter soup. Any vegetables and grain can be used making a hearty meal that tastes very meaty
